Abstract

We detected dye-linked D-mannitol dehydrogenase activity in the crude extract of Acetobacter xylinum KU-1. The enzyme activity was specific for D-mannitol, and not pyridine nucleotide (NAD+, NADP+)-dependent. The optimal pH was found to be 5.0, while the optimal temperature was at 50°C. The enzyme activity was inhibited by p-quinone noncompetitively.
