Vitamin B₁₂ is destroyed by the addition of substantial amounts of vitamin C in the presence of copper. Effects of carnosine and anserine, natural water-soluble antioxidants, on the destruction of vitamin B₁₂, were studied. Addition of carnosine (10mM) effectively repressed the destruction of vitamin B₁₂, but anserine had only weak inhibitory effects.
