Japanese mushroom “Cotrinellus Shiitake, in three forms of fresh, dried, and exposed to ultraviolet ray, quantitatively 90g, 9g, 9g per day respectively, were taken for a week by 30 healthy girls divided into 3 groups.
Bloods were sampled before, after and during the period for a total of 4 times, and analyzed for serum cholesterol concentration and fatty acid composition of serum lipid.
The serum cholesterol level decreased by 12% in case of the dried, 7% in the fresh, and 6% in the exposed to ultraviolet ray.
But the fatty acid composition of serum lipid did not altered whole through the period.
