Abstract

True polishing ratio of rice could be estimated accurately (with standard deviation of difference 3.17%) and easily by near infrared reflectance spectrophotometric analysis wothout influence of water contained in samples. Though values of absorbance and true polishing ratio were most affected by the moisture content of rice samples, these influence could be avoided by measuring at wave length 2, 171 nm and by adjusting moisture content of samples to 2-6%. Analysis was also affected by contents of crude fat and crude protein. Further studies seemed necessary on samples of wider ranges for the establishment of this method, because the present experiment was restricted to rice harvested in 1989 and to a few varieties.
