Odor Sensitivity in the Japanese Middle Age
―Relationships among age, eating habits and olfactory sensitivity―

Abstract
  Our aim of this experiment is to consider the relationships between the aging and the eating habits of men and women presently at the ages of 40's to 60's. We plan to perform an olfaction survey every couple of years in order to track the aging effect on the odor sensitivity. The panel were selected from our company and their families, currently live in Tokyo or areas environs to Tokyo, between the ages of 40 to 69, for the convenience of a long-term survey. In the olfaction survey, 8 types of microcapsuled odor compounds (Methyl cinnamate+Matsutakeol, Cinnamic aldehyde, Citral, Vanillin, 5-Methyl-2-phenyl-2-hexenal, n-Butyric acid, Iso amyl acetate, Phenylethyl alcohol) were applied to a sheet for the examination of 3 factors, the sensitivity, preferences, and discernment. As a result, the average sensitivity of the 60's against 8 types of odor decreased. Parallel to the olfaction survey, we performed a survey concerning the panel's attributes and their eating habits. From the eating habit survey, we confirmed that the 40's to 60's in this experiment were healthy and active in their lives. In addition, the preferences relating to foods and aging were the important factors concerning the preferences of odor.
