Jellide Mackerel Meat Probably due to Myxosporidium Infection

Abstract

Mackerel meat imported from Norway became jellied with defrosting, the meat was suspected to be deteriorated by Myxosporidium infection by organoleptic, parasitological and bacteriological inspections.
