Abstract
It was found that riboflavin-β-galactoside was formed from lactose (or ο- nitrophenyl-β-D-galactopyranoside, ο-NPGa) and riboflavin by crystalline β-galactosidase from Escherichia coli. It was also pointed out in crystalline β-galactosidase that both β-galactosidase activity to hydrolyze ο-NPGa and galactosyltransferase activity to synthesize riboflavin-β-galactoside from ο-NPGa and riboflavin were parallel on some properties such as optimal pH, optimal temperature, pH stability and heat stability.
