Abstract
The contents of folate compounds in tempeh were much higher than those produced by Rhizopus oligosporus in the soybean-potato medium. The cause of the fact was investigated. Any inhibitor for the folate production was not detected in potato extract or the boiled soybean juice. It was presumed that the main reason of higher concentration of folate compounds in tempeh will be a higher nutrients concentration together with the other suitable conditions for Rhizopus oligosporus in the tempeh fermentation.
