The structure of mogroside V (1), C60H102O29·2H2O, the sweet principal of Fructus Momordicae, has been established by chemical and spectroscopic evidence as mogrol-3-O-[β-D-glucopyranosyl (1→6)-β-D-glucopyranoside]-24-O-{[β-D-glucopyranosyl (1→2)]-[β-D-glucopyranosyl (1→6)]-β-D-glucopyranoside}.
