We studied the sterol composition of turtle oil by gas chromatography and mass spectrometry. It was shown that in the case of green turtle, Chelonia mydas mydas LINNE from New Guinea, the sterol of the body oil contained approximately 96-97% cholesterol, 3% β-sitosterol, 0.2% campesterol and 0.15% stigmasterol. On the other hand the green turtle from Costa Rica contained much cholesterol and a little amount of β-sitosterol. The sterol (C29H50O) extracted from the unsaponifiable matter of body oil was confirmed to be sitosterol type.
