    1. Preliminary experiments were carried out using enzymes obtained from yeasts, bacteria and molds, in order to search for the source of an enzyme which had the highest hydrolyzing activity of AsA-esters (AsA-Pal1=6-O-Palmitoyl Ascorbic Acid, AsA-Pal2=2, 6-O-Dipalmitoyl Ascorbic Acid). Candida cylindracea, a kind of yeast, exhibited the strongest AsA-ester hydrolyzing activity.
    2. Lipase preparation obtained from Candida cylindracea could hydrolyze both AsA-Pal1 and AsA-Pal2.
    When Na-taurocholate was used as the detergent, the ratio of hydrolysis was 98.0% and 45.1%, respectively. When lecithin was used as the detergent, the ratio of hydrolysis was about 99.0% and 82.0% respectively.
    3. Purified lipase obtained from Candida cylindracea hydrolyzed AsA-Pal2. When Na-taurocholate was used as the detergent, the ratio of hydrolysis was 51.1%.

    The present study was undertaken to observe the interaction among Ca, P and Mg metabolism.
    Investigations were made on the effect of dietary Ca and P levels on Mg balance.
    30 male albino rats of the Wistar strain with initial body weights averaging 60g (young) and 320g (adult), respectively were used.
    A high dietary Ca level introduced a decrease in the absorption and retention of Mg in both young and adult rats.
    This tendency was distinguished in the adult rats fed with the high Ca and high P diet. At the young stage, the dietary high Ca level showed a reduction in weight gain and this tendency was more remarkable in the high Ca and high P diet group.
    The adult animals fed on the high Ca and high P diet showed the lowest Mg content in the femur and the highest Mg deposition in the kidney.

    Comparative studies on the effect of lightness and darkness on the birth rate of rats were performed for one year.
    (1) The lightness group invariably showed a high birth rate, but the darkness group still had reproductive ability after six months of darkness.
    (2) The average body weight of the offsprings at weaning during the experimental periods showed no significant difference between lightness and darkness groups.
    (3) Data of reproductive ability of individual rats and litters exhibited large differences and indicated that litter-mates should be used in reproductive studies.

    The serum cholesterol concentration of 8 researchers (6 males, 2 females) has been observed every month, early in the morning for a prolong period of 5-16 years, and changes accompanied with aging and seasonal variations of each subject were studied.
    Though the serum cholesterol concentration of each person held a steady level for a short period, it gradually increased from year to year at the rates of 0.7-2.6% per year.
    These personal increase-rates did not show any correlation with their age, blood pressure or cholesterol level but correlated with the yearly increase-rate of the body weight.
    A negative correlation was found between the serum cholesterol and the basal metabolism.
    In the seasonal variation of the serum cholesterol level a two-phase variation was observed, showing a first peak in February and the second between June and July.

  • On the Conditions of the Nutrient Intake

    The dietary attitude which is so good as to maintain life and active energy at old age needs desirable management of nutrition as well as the proper management of life.
    The dietary habits of long existing from the past have close relations with man's span of life, and under the influence of both natural and social environments, they have deep relations with man's life and regional environments.
    The subjects of this survey were long lived persons, 52 men and women, over seventy years old of Oki island, Shimane profecture.
    The results of their nutrient intake are summarized as follows.
    The relations between dietary habits and longevity, and the background produced remarkable results were discussed.
    1) The caloric intake was considerably different among individuals. The protein intake of the men reached the target intake. The energy value of both sex and the protein intake of the women nearly reached the target intake.
    2) It was made clear that all subjects consumed animal protein by taking fresh-mild taste fishery products. Therefore, the tendency to ward the consumption of animal protein and fat can be said to be desirable.
    3) On the contrary, the intake of micronutrient elements was fairly low on the whole. A considerable intake is needed.
    4) There was a marked tendency to eat fish shellfish, seaweeds, vegetables, and pulses, together with a large quantity of rice.
    5) Consequently, it was revealed that longevity has close relations with both natural and social environments.

    Osmotic pressure of foods estimated by depression of the freezing point, generally was 8-9atm. But values of watery vegetables such as cucumber were low and sugary vegetables such as pumpkin were high.
