Taste perception significantly influences dietary behavior and is increasingly recognized as a modifiable factor in the prevention of cardiovascular and lifestyle-related diseases. Impaired salt taste sensitivity may lead to excessive sodium intake, thereby contributing to hypertension and related conditions. Zinc deficiency, prevalent among patients with chronic heart failure, further impairs taste by disrupting taste cell regeneration. Zinc supplementation may restore taste, improve nutritional status, and reduce frailty risk. Moreover, the umami taste has potential health benefits, such as enhancing dietary satisfaction, promoting salivation, supporting salt reduction, and preventing obesity. Strategies that incorporate umami into “delicious salt reduction” campaigns and early-life taste education rooted in Japanese food culture may offer effective tools for metabolic syndrome and frailty prevention. Enhancing taste sensitivity represents a novel and promising approach to extending healthy life expectancy while promoting the concept of “eating well to stay well.”
