Zygosaccharomyces rouxii, using the vanadate resistance.
Z. rouxii strains could grow on a YPGS medium (1% yeast extract, 1% polypeptone, 1% glucose and 15% NaCl, pH 5.3) containing 3 mM ammonium vanadate, but
Candida versatilis and
C. etchellsii strains could not. Also, 40% tested strains of
C. versatilis and
C. etchellsii could grow on a YPGS medium containing 8 ppm o-vanilin. It was revealed that a vanadate resistance method is a selective isolation method compared with a conventional o-vanilin resistance method for
Z. rouxii strains from miso and soy sauce mashes.
