    This study focuses on the availability of retail formats to reveal what consumers purchase and their grocery shopping characteristics. The relationship between access to grocery stores and food consumption was also qualitatively examined from the perspective of retail formats.
    First, an overview of the respondents' grocery-shopping environment revealed that the stores where people shop most frequently are not the closest ones. Additionally, we found that the elderly tend to shop less frequently and spend less money on shopping trips, as they have limited access to grocery stores. This finding suggests that they cannot compensate for the low shopping frequency by buying in bulk, potentially affecting their food diversity and the frequency of consuming fresh food.
    We then created subsamples by dividing the respondents into those who drive to visit the stores where they shop most frequently and those who do not. We estimated a Tobit model using the food consumption diversity score and the frequency of consumption as the objective variables, and the retail format's availability as the primary explanatory variable. The results indicated that the distance to the stores where people shop most frequently is greater when they drive to the store. People maintain diversity by additionally purchasing vegetables and fruits at convenience stores (hereafter “CVSs”). The results suggest that the availability of vegetables and fruits at CVSs potentially affects the diet of the elderly who can drive or have access to cars.

    To formulate a guide designed to ensure that the business of providing countryside stays becomes sustainable, we examine the impact of destination attributes on overall satisfaction and revisit intention. Further, we seek to identify the characteristics of each attribute. Among the attributes, “outdoor activities,” “staying in a farm-inn,” and “eating local cuisine” have relatively strong effects on overall satisfaction. In particular, the attributes “outdoor activities” and “staying in a farm-inn” are key areas of improvement for the rural tourism industry, as countryside stays in Japan offer relatively low rates of satisfaction with these attributes.

    Although citrus consumption has been declining, producing districts are currently attempting to increase their market appeal by branding their citrus fruit products. To determine basic knowledge regarding effective branding, this report seeks to clarify consumers’ brand awareness structure by conducting a study on regional citrus brands. For this purpose, we used the technique of network analysis. In doing so, it was possible to illustrate a cognitive structure connected to the word kabosu. This analysis demonstrates that the word kabosu is closely associated with Oita. However, consumers don’t make a detailed differentiation between sour citrus fruits. Therefore, the brand parity level of Oita kabosu is quite high.

    In this study, we analyzed the role of wholesalers who were not surveyed as part of the group secretariat of Japan Good Agricultural Practice (JGAP) group certification. Our findings revealed that wholesalers can substitute 20% of the points required to obtain certification, compared with farmers’ personal efforts. The reasons it is difficult to substitute perfectly for wholesalers are summarized as three factors relating to agricultural expertise. Conversely, this study found that even small-scale farmers can obtain GAP certification by establishing a group secretariat for wholesalers.

    The purpose of this paper is to clarify the method to set delivery charges of agricultural production materials for distance bands by utilizing integer programming and applying it to set them for compost delivery. This method can set the delivery charge for each pre-set distance band in such a way that the charge shows a clear integer value such as 2,000yen, 3,000yen, and so on. It has become clear that this method has the possibility to reduce the gap between needed cost and delivery charge for distance bands. This method is applicable for setting delivery charges also targeted for districts such as municipalities.

    In this study, we assessed the value that consumers attach to milk safety from the results of a random nth-price auction experiment and investigated the role of hypothetical bias. We found that study participants were willing to pay 28.9% (or 50 yen) more for milk from cows whose diet did not include genetically modified feed and 45.6% (or 79.1 yen) more for milk that was antibiotics-free. We also confirmed the need for researchers to guard against hypothetical bias when evaluating new risks.

    This study aimed at clarifying institutional issues of “JGAP Domestic Animal and Livestock ” certification through evaluating management effects and the certification system. Results of a questionnaire showed most certified farmers had high opinions of JGAP. However, some farmers wanted economical merits to justify additional costs and labor for JGAP certification. But, certification is for farm management not added value. Japanese government and GAP should provide farmers an easy-to-understand explanation of economic merits according to the quantification of management efficiency. Finally, willingness to recertify was influenced by the level of understanding of standards and satisfaction with contents of the review.

    This study analyzed the consumer preferences for Japanese baked sweet potatoes in Singapore and Thailand. We conducted tasting surveys on consumers using three different types of Japanese baked sweet potatoes. As a result, firstly, we find that both countries consumers generally prefer Japanese baked sweet potatoes. Secondly, we also find consumers in two countries have different preferences. More specifically, consumers in Singapore tend to prefer sweeter varieties, but on the other hand Thailand doesn’t. Thus, it is vital to conduct this kind of tasting survey and clarify the preferences of each country to increase exports of Japanese agricultural products.

    Employing a discrete choice experiment with actual purchases and estimating the random parameter logit model, this study elicited Japanese consumers' willingness-to-pay (WTP) for imported rice varieties as compared to domestic rice. WTP for domestic Koshihikari rice was the highest, while imported rice varieties such as the US-produced Koshihikari variety Tamanishiki, medium-grain Calrose, and Australian short-grain Opus, were comparatively less accepted. Presenting consumers with the opportunity to taste imported rice varieties, WTPs for Calrose and Opus increased to the level of Tamanishiki. The study found that consumers’ WTP was affected by individual attributes, rice consumption behavior, and preferences for rice characteristics.

    This research examines how providing Japanese consumers with fair trade information affects their willingness to pay (WTP) for fair trade bananas. We estimated the WTP before and after providing information with 86 young consumers in their 20s through an online survey by a conjoint analysis. The results show that providing information increased WTP by those who have understood fair trade or have been interested in the poor without information. Especially, the information about the benefits of fair trade is more effective than the information about the disadvantages of non-fair trade.

    This paper analyzes the current state of consumers’ acceptance of newly introduced vegetables by profiling existing and potential vegetable buyers. Although few consumers have tried many types of newly introduced vegetables, our survey results show that there is a high potential interest in these vegetables. Consumers who have had many types of newly introduced vegetables are well-off, have time to spare, and have many buying channels. Food neophobia is one of the factors that hinder the acceptance of newly introduced vegetables. With more information and purchasing opportunities, these vegetables could be more widely accepted.

    The vegetarian groups in the world are very diverse. In order to develop the vegetarian foods industry, it is necessary to establish global standards that can be shared by both producers and consumers. In this paper, we focus on special in-flight meal menus provided by airlines that have already been served based on the substantial global standards, and clarify the characteristics of their way of categorization by making use of the database provided by International Air Transport Association (IATA).

    It is common to aggregate goods in the empirical analysis of demand. However, there must be a utility function that can be rationalized for the respective data. In this study, we apply a non-parametric test devised by Varian (1983) to a weakly separable utility function. Applying the test to dairy POS data, we obtain results indicating the need to reject their aggregation into representative goods categories, as in previous studies. On the other hand, by introducing the Afriat efficiency index, we infer that the goodness-of-fit of the GARP test is significant. Therefore, although the validity of aggregation is not supported, the degree of aggregation error may not be significant.

    This is a food environment intervention study, aiming at improving the diet of hospital workers. The intervention was conducted at a convenient store in a hospital in Tokyo. The intervention included availability, accessibility, information and incentive. We used nudge tactics to increase the effect. To evaluate the intervention, we used the point of sales data and examined the response of the staff. Total sales and sales of healthy items significantly increased. The intervention was well-accepted by the staff. It suggests that using nudges to improve the food environment at a convenient store in a hospital can increase sales.

    This study shows how food policy councils (FPCs) and civil society organizations (CSOs) in Toronto, Canada, work to reduce food insecurity and empower communities. Several studies have elucidated the roles of FPCs and CSOs with regard to community food assets like food banks, farmers markets and local food systems. The community-centered approach has benefits such as connecting, educating and inspiring people, in addition to social welfare. We researched two different types of organizations; the Toronto Food Policy Council as a network and advocacy organization; and the STOP Community in the city as a grassroots organization. We found that each organization had unique characteristics. Both provided clues for effective community involvement with regard to providing assistance to people facing food insecurity. These points offer insights into how to improve local food communities and organizations in Japan.

    This study quantitatively investigates participants' evaluation of community supported agriculture (CSA) using a questionnaire and a choice experiment. We estimated the willingness to pay (WTP) for partial values of CSA: the volunteer farm work, distance to the CSA from home, and cultivation method. We later applied the mixed logit model, which allowed us to estimate the parameters controlling individual heterogeneity. The results deduced that participants had a significantly negative WTP for conventional cultivation. The practice of organic farming requires a huge labor force, and volunteer farm workers resolve the issue with labor shortage. However, volunteer farm work shows a significantly negative WTP. This dilemma is one possible hindrance to the spread of CSAs in Japan.

    Using an online questionnaire survey, the present study aims to clarify how a sense of burden affects frequency of purchase/intake of fresh fruit. The sense of burden at the time of product selection and at the time of cooking/eating is examined.The results indicate that fewer people have a sense of burden at time of product selection than at time of cooking/eating, and those who have a sense of burden at time of product selection tend to purchase fresh fruit less frequently than others.

    The network of multiple markets is becoming more important, while the amount of vegetables traded through the central wholesale market system is decreasing. We investigated the structure of the current wholesale markets network using the daily price of radish at four branch markets in Tokyo Metropolitan Central Wholesale. We applied the vector error correction model (VECM). Based on the estimated VECM, we tested whether these markets were integrated and analyzed which market had a stronger influence on the others. The results suggest that these markets are integrated and that Ota has the strongest influence on the other markets except Kita-Adachi.

    Terroir is a geographic space limited by inherent natural and human elements. It is one of the essential concepts for agricultural production in France and AOC (Appellation d'Origine Contrôlée). The products produced within this space are thought to have originality. Applying this concept to Japanese regions would lead to local revitalisation. Therefore, the objectives of this paper are 1) to analyse the elements in the Takashima area used in production, through interviews with farmers in Takashima, Shiga Prefecture and 2) to discuss the clues for applying terroir to other regions of Japan based on this analysis and the AOC specification.

    In order to promote the turning of food waste into livestock feed, it is necessary to develop a mechanism for operating efficient and stable food recycling system. Negative pricing is likely to be one of the crucial issues in promoting this system. In this study, interview surveys with two feed producers located in suburbs of metropolis and local cities were conducted based on the hypothesis, feed producers may be the key players in improving this system. Both feed producers were building up mechanisms that would benefit food waste generators, pig farmers and their local businesses. Results of this study revealed that feed producers could play a crucial role in improving the mechanism, which could promote social implementation of this system.

    The aim of this study was to compare the characteristics of farm management between areas suitable for growing high-quality sake-brewing rice and other areas. The study used the agricultural census and questionnaires for farmers; the analysis results clarified the different characteristics of each area. The characteristic of the areas suitable for high quality sake-brewing rice is that there are many small-scale farmers; however, they are highly determined to expand their scale of farming. The characteristic of the other area is that there are relatively large-scale farmers whose operations are part of complex management.

    Animal welfare has recently become an important policy for the European Union (EU) and the World Organisation for Animal Health(OIE). In 2012, battery cages for egg-laying hens were banned in the EU; however, no specific regulations regarding cows exist because the dairy chain is considerably complicated in global terms. Nonetheless, the organic milk market has been extended in the EU. In Japan, conversely, a animal-friendly dairy supply chain began in 2014, and the fifty-one consumers groups buy the pastured milk. Accordingly, this paper analyses the current situation of the animal-friendly supply chain in Japan.

    Network analysis can be used for the input-output table because its intermediate transaction can be treated as an adjacency matrix. In this study, we applied the network analysis framework to the national input-output tables of ASEAN countries to analyze and compare countries’ industrial structures. We focused on the sectors related to the food system and conducted an analysis based on the centrality of the network. As a result, three categories of ASEAN countries were defined using the centrality index to rank the sectors related to the food system. The correlation of ASEAN country industrial structures was analyzed using Spearman’s rank correlation coefficient based on centrality.

    In this study, we examined the differences in food preparation efforts and their causes. We used two-step online survey data comprising 50,000 samples with 726 samples in each step. We clustered the data by the degree of effort, obtaining four clusters of individuals—those who enjoyed preparing and expressed concern for every meal, enjoyed preparing dinner, sought to minimize their efforts, and preferred quick meals in all situations. We then measured the food values using the best–worst scaling method and found that attitude differences toward food preparation were well characterized by differences in food values and socioeconomic conditions.

    This study analyzes the agri-food intra-industry trade of Taiwan and Korea using intra-industry trade (IIT) indices for 2000–2018. The IIT indices of Taiwan and Korea were higher than the average values for East Asian countries during this period. This reflects the fact that Broad Economic Categories (BEC) 122 have a larger trade share and higher IIT indices. A comparison of the BEC122 IIT indices for Taiwan and Korea shows that Korea index is larger due to the differences in trade patterns between Japan and Thailand.

    In this article, we examine how consumers evaluate agricultural products from radio affected area after Great East Japan Earthquake with choice based conjoint analysis. Our analysis focus on both product attributes and personal attributes that affect consumer’s evaluation. Results show that consumers are still very concerned about consuming agricultural products made in Fukushima and Tohoku area almost 4 years after the disaster. Female living with children in western Japan have the severest evaluation of the Fukushima made products. Information improves consumer’s evaluation of the Fukushima made products. Processing can be a good marketing strategy for Fukushima made products.

    In Taiwan in recent years, the sales volume of organic agricultural products and foods has been increasing year by year, and the organic market is growing, against the backdrop of heightened awareness of safety, security and health. Recent research is revealing the actual situation of building an organic food chain in Taiwan, but the actual situation of the efforts of co-ops is unclear. The Homemakers Union Consumers Co-op, which is a nationwide organization, was established for the purpose of creating a safe environment for obtaining safe food. In addition, this co-op aims to realize a sustainable society by building a food chain of organic agricultural products and food. This article reveals that the collaborative product development process plays an important role.

    This study deals with the transformation of the valuation and cultivation method of Tamba-Dainagon red beans (Tamba-Dainagon Azuki) in the Tamba area. As a result of the characteristics of the beans, the harvesting method by hand-picking has been maintained for a long period. However, with the number of people engaged in agriculture decreasing each year, began to suffer from a shortage of successors. Therefore, the harvest method was mechanized through village-based farming organizations. The red beans produced by mechanized harvesting have not reached the quality and yield accepted by trading companies and Kyoto style Wagashi (Kyogashi) stores. Despite these problems, certain users have prioritized sustaining production over extinction by accepting mechanization, and in recent years have showcased a cooperative relationship. The red beans harvested by machines will be valued again by bean trading companies, Kyogashi stores, and others.
