紫色系パッションフルーツ果汁中のプロテアーゼの特性について検討し, 以下のような結果を得た.
(1) 本酵素の最適pHは3.0で, pH4.0以上では急速にその活性が低下した.また, 最適温度は50℃であった.
(2) 果汁を-18℃で凍結貯蔵した場合, 16週間まで活性がよく保持された.また, 果実を+5℃で冷蔵貯蔵した場合, 過熟するに従い, 活性の低下が認められた.
(3) 本酵素の卵アルブミンに対する分解は限定的で, 分子量39,000へ分解された後, それ以上の分解は認められなかった.また, 本酵素を1時間筋肉タンパク質に作用させたときの分解活性をヘモグロビンと比較すると, 筋漿タンパク質に対する分解活性はヘモグロビンの約63%で, 筋原繊維タンパク質では約11%であった.

筋放電図を積分計により積分し, 下顎運動と組み合わせて咀嚼筋活動量の分割分析を行った.その結果は以下のとおりであった.
(1) 破砕筋活動量は, 初期から終期にかけて減少傾向を示し, その程度は食品による違いが顕著であった.また, 19食品間の初期および終期の変動係数は, それぞれ31.8%および15.8%であり, 食品による相違が咀嚼終期では小さくなった.
(2) 磨砕筋活動量は, 初期から終期にかけて増加傾向を示し, その程度にも食品による違いが顕著に認められた.19食品間の初期および終期の変動係数は, それぞれ55.8%および26.4%であり, 食品による相違が磨砕筋活動量においても咀嚼終期に小さくなった.初期磨砕筋活動量の19食品間の変動係数が, 他のパラメータの変動係数よりも大きいことから, 食品の物性の違いは初期磨砕筋活動量に最も反映されることが示唆された.
(3) 破砕および磨砕筋活動量と破砕および磨砕運動区分時間との相関はいずれも高く, 筋放電持続時間の測定により, 食品テクスチャーの特徴をある程度推定できることが認められた.ただし, 19食品間の変動係数から, 筋活動量区分の方が時間区分より食品間の相違が顕著であり, 咀嚼の進行に伴う変化も顕著であることから, 詳細な食品テクスチャーの検討のためには筋活動量を分割分析する方が望ましいと考えられた.
(4) 咀嚼回数, 初期および終期の破砕および磨砕筋活動量の五つのパラメータを用い, 主成分分析により新しい食品分類を行った.その結果, 磨砕に関する情報をも含む咀嚼活動の実態に即した4グループに分類できた.

Three common skiing clothing systems (in three layers of underwear, ski undershirt, and ski-wear) were studied using three kinds of underwear to make clear the effect of clothing systems on human body. In this study simulation tests using THERMO LABO II were conducted under conditions approximated to actual wearing. The measurements were carried out at alternate ambient temperatures of -6 and 25°C.
The test results are summarized below :
(1) No difference in dry heat loss among three clothing systems was found. In insensible perspiration simulation tests, however, differences in heat loss among the systems were found and particularly the W-clothing system (comprising wool underwear) showed a larger thermal insulation effect at the low temperature.
(2) The C-clothing system (comprising cotton underwear) and the P-clothing system (comprising polypropylene underwear) after sweating showed a larger fall of temperature within the clothing than that of the W-clothing system.
(3) The tendency described above was strengthened with increasing perspiration, and in the C- and P-clothing systems increased dullness of the thermal sensation was found in the wearing tests.
(4) The test results show that the W-clothing system is the most suitable for wear at very low ambient temperatures.

On January 10, 1895, the uniform regulation for male elementary school teachers was promulgated by the ordinance of Hyogo Prefecture. It included only the principals and regular teachers who made up one third of all the teachers at the elementary schools.
The similar uniform regulation came into effect in some other prefectures such as Fukushima Prefecture and Niigata Prefecture. The uniforms consisted of a jacket and trousers. The designs of the jacket were almost the same as the ones adopted by Hyogo Prefectute, which had a stand collar, trimming braids, hooks and eyes in front opening and slits at the bottom. Thus, it can be considered that the adoption of the uniform regulation showed the following :
(1) Considering the fact that the uniforms adopted by the prefectures were a kind of Western clothes, the male teachers' wearing Western-style uniform helped to promote the Westernization policy taken by the government.
(2) The designs of the uniforms adopted by these prefectures were almost the same. It may suggest that the prefectural leaders at that time were more conscious of the new integrated government than of the old feudal government consisting of the feudal domains replaced by the prefecture.
(3) The origin of the designs of elementary school teachers' uniform was the uniform of the professors at the teacher's college, “Shihan Gakko.” Their uniform was originally designed based on the military uniform which was also ordered by the uniform regulation. Therefore; the uniforms for male elementary school teachers adopted by the ordinance must have played some role in creating the militaristic atmosphere at the elementary schools.

以上の結果から, 家族類型と居住関係の変化 (動態) についてみると, 次のことが指摘できる.
(1) 調査対象期間に家族類型に変化のあったものは半数を超え, 高齢夫婦家族と長系家族に2極化している.
そのなかで子供と同居していた家族から高齢者2人だけの夫婦家族へ変化したものが最も多い.
逆に夫婦家族から子供と同居することになった家族は19家族のうち3家族だけと最も少ない.
(2) 居住関係に変化のあったものは約半数であるが, 子供が親から離れて近居非扶養型や別居非扶養型の居住関係をとるものほうが, 同居非扶養型の居住関係になるものよりも多い.
このように, 富山市におけるこの16年間に, 家族類型は高齢夫婦家族と長系家族に大きく2極化しており, とくに同居家族から高齢夫婦家族に変化していく制合が多く, 明らかに同居指向が下がっているといえる.また, 長子以外の「直系家族」もみられ, その意味では, 富山市のような伝統的直系家族が優越するといわれる地方都市においても, 従来の長子相続型の「直系家族」が絶対的にも相対的にも減少し, 家族関係は流動化, 多様化し, それに伴って居住関係も流動化, 多様化の現象をみせていると思われる.
第2報では, さらに高齢者の居住関係の変化による住生活の安定性と課題に関して, 分析と考察を進めることにしたい.

肉スープストック中のタンパク質に対する, 調製時の温度の影響, および筋肉タンパク質の加熱可溶性に及ぼす塩濃度の影響について検討し, 以下の結果を得た.
(1) ストック調製時の加熱温度の上昇に伴い可溶性タンパク質量は増加し, 70℃, 80℃加熱では92℃加熱に比べて可溶性タンパク質量は70～80%であった.
(2) 筋漿タンパク質を沸騰水中で加熱するとき, 0～0.15M KClの範囲で加熱可溶性タンパク質量, 低分子物質量に変化はみられなかった.
(3) 筋原繊維タンパク質を沸騰水中で加熱した場合, 0.15M KCl中では0.05M KCl中に比べより多く可溶性タンパク質量が増加したが, そのSDS-PAGEパターンには差はみられなかった.
