      Differences in the perspectives for “understanding children” based on years of teaching experience were investigated. Participants were in-service childcare workers (N=136). Video clips of small children were shown to the participants and they were asked to identify the children's feelings based on these, as well as reasons for their behaviors using the free description method. Their responses were categorized and perspectives for understanding children were analyzed. The results indicated that novice workers focused on both “external understanding,” such as behaviors and “internal understanding,” such as feelings. On the other hand, experienced workers considered the “background” of the children, such as their family environment, and attempted to understand children from a more diversified perspective.

      A questionnaire survey was conducted about the effect of blue motifs on white plates, including the number of motifs and the presence of a blue rim, on appetite by placing Japanese food on small serving plates. Results showed that blue rim motifs stimulated the appetite better, and two motifs were often evaluated better than a single motif. A blue rim and motifs may bring the colors of the dish closer together and balance the arrangement and coloration of foods. There was a tendency for lower evaluations when the motifs were hidden by the dish; therefore, it is desirable to place dishes so that the motifs are visible. Furthermore, the optimum blue proportions that make the dish look better are different between patterns of a blue plate and motifs on a white plate: about 40% and 16-20% of the entire plate, respectively. An additional questionnaire revealed that when dishes with patterns and motifs were compared side by side, dishes with motifs went better with Japanese dishes served on small plates.

      The purpose of this research was to examine material in elementary school home economics textbooks and identify materials appropriate for use in citizenship education. Furthermore, we aimed to present a tentative plan for a citizenship education curriculum in elementary school home economics. We came to the following conclusions through an investigation of the relation between the existing textbooks for elementary school home economics and the components of citizenship education for home economics.

      1. We were able to choose subject matter from existing textbooks. However, fostering citizenship in elementary school home economics education requires paying attention to two important issues: education of controversial issues and the development of a propensity for putting matters into perspective.

      2. Lesson planning can be conducted by examining the home economics citizenship education content matrix for the two issues mentioned above. Therefore, by using existing home economics textbooks, in this research we present a tentative plan for citizenship education in elementary school home economics.
