    The change in the distribution of ascorbic acid during maturing of strawberry fruit (Fragaria chiloensis Duch.) was studied biochemically by Indophenol method and histochemically by means of Sösa method. As maturing the fruit the content of the ascorbic acid increased, but in the well-riped fruit its content decreased.
    Before pollination ascorbic acid evenly distributed in the fruit (receptacle) and seed (ovary), but as the fruit differentiated the distribution of ascorbic acid became regionally different. The strongest stainning of ascorbic acid was observed at the base of seed, where the fibrovascular bundle enters from the receptacle to the seed.
    The ascorbic acid evenly distributed in the receptacle, except for that the epidermis of the receptacle and the boundary between medulla and cortex, where is rich in fibrovascular bundle.

    While milk is heated in an open pan, a scum forms on its surface, and at the same time, the residue adheres to the pan. To know the protein composition of the scum and the residue, electrophoretical analyses were made in polyacrylamide gel. The results are as follows :
    (1) All proteins of the scum and the residue were classified into casein group.
    (2) Main bands of the scum and the residue were αs-casein and β-casein respectively. In addition to these, the scum had other bands which were categorized into α-casein group.
    (3) Fraction-s was separated from the samples to determine k-casein group by the method of Waugh and Hippel. Through electrophoretic patterns of fraction-s, there were several bands which were identified to be k-casein group, they were indistinct though.
    (4) Ratios of α-casein to-casein to s-casein in the scum, and a-casein to β-casein in the residue were calculated through the densitometer, no definite results were obtained.

    The coupling effect of L-ascorbic acid oxidation induced by the free radical productive systems on fatty acids oxidation was investigated.
    Stearic acid was decomposed by L-ascorbic acid, and linoleic and linolenic acids and methyl linoleate were also greatly decomposed.
    These oxidative decompositions induced by L-ascorbic acid were promoted by the further addition of hydrogen peroxide, ferrous ion and also the Fenton's system (hydrogen peroxide plus ferrous ion).
    This decomposition was remarkable in the case of L-ascorbic acid and the Fenton's system.

    The effect of amino acid on the changes in flavor, color and volatile components of soy bean oil was studied.
    Experiment was carried out by using various kind of amino acid solution which was absorbed in the cotton ball, and fried in non-heated or previously heated soy bean oil.
    Results were that the color and flavor changed remarkably, in case of previously heated oil, while non-heated oil showed a little change in color regardless of the kind of amino acid used. For instance, in case of heated oil, when the sample of 0.02% glycine was fried for ten min at 180°C, the result was about equal to the color of 2% glycine fried for thirty min at the same temperature of non-heated oil. Further more, it was found that the color changes distinctly, according to the decrease in 2-heptenal contents of the soy bean oil.

    The green tea extract was used for the cooking of rice.
    The effect of tea flavour and the texture of rice were compared with that of the plain white rice.
    The rice cooked with the extract of Ban cha (the coarse tea) was better taste, and the texture was little harder than the white rice.
    It is preferable to use green tea extract for the cooking of stored rice in order to remove the dislike flavour.

    With the 1, 072 boys and girls attending A and B junior high schools in Fukushima Prefecture, we pursued their individual growth through the annual physical examination records in and after the 1st grade. Checked items were 3 : stature, weight, and bust girth.
    1) General Distinction : With A school, boys' averages by grade are below the national averages and similar to the prefectural ones. Girls' averages indicate no significant differences from the national and the prefectural averages. With boys and girls of B school, their respective averages for each grade are above the national and prefectural averages.
    2) Growth Process : The respective averages by grade and sex confirm an obvious growth with age and a sexual difference. From 1st to 4th, boys slightly excel. Then girls keep showing greater increases till the 7th grade, resulting in their ascendancy. During the last two grades, however, boys outstrip girls and get ahead. As to the total gain in the 6 years (1st to 7th), girls are superior both in its amount and in its ratio.
    3) Growth and Menarche : (1) Earlier growth means earlier menarche. (Menarcheal rate before the examination in the 7th grade is 38% at school A and 60% at B.) (2) Growth is conspicuous during a year or two before menarche and then slows down. With stature, rapid increase is followed by stagnation. In weight and bust girth, this contrast is not so striking as in stature. Both continue to show a less but gradual increase.
    This is a preliminary study for our further pursuit of growth features through our own measurement.

  • On Lower Proportion

    For the purpose of designing comfortable garments, we studied differences of the body proportions of male and female, young group being 2024 years old and middle aged, 4044 years old. The items studied are 10 ratios, the relation of the length measurements (crotch to waist (B), crotch to ankle (C), waist to knee (D) and knee to ankle (E)) to the lower extremity length (A) and that of the girth measurements (thigh girth, knee girth, hip breadth and hip depth) to the hip girth, and others.
    The results obtained are summarized as follows :
    1) As to the ratios of the length measurement, C/A and E/A of the male are bigger than the female's both young and middle aged. And C/A and E/C of the young are bigger than that of the middle aged both male and female.
    2) As to the ratios of the girth measurements, hip breadth/hip girth of the male is bigger than the female's, and the young male's is bigger than that of the middle aged male. The thigh girth/hip girth of female is bigger than the male's both young and middle aged.

  • The Deformation and Breakage by the Repeated Shear Stress Appliedon Seam Line of Lining Fabrics

    In the previous paper the results obtained by the statical tensile and shear strength test of the seam of sewn lining fabrics were compared with the experimental results of unsewn lining fabrics.
    In the present paper the results obtained by the repeated shear strength and elongation test have been compared with the experimental results of the previous paper.
    The results obtained here are as follows :
    1. The slippage on a seam line takes place most easily on the silk fabric. The correlation between the slippage width and the seam efficiency of the elongation in statical tensile breaking test is significant.
    2. In the tensile test of the fabrics after being subjected to the repeated shear, the cupra fabric breaks on the woven cloth, the polyester fabric gives rise to the sewing thread breakage, and the silk fabric produces the yarn slippage.
    3. The repeated shear strength on the seam line is dependent on the kinds of fibers rather than on the properties of woven fabrics.

  • Dependence of the Time Plans on Having Children and Age of the Youngest Child (Compared with the 1971 and 1967 Value)

    Daily activities of married couples have been analyzed according to whether or not the wives are employed and whether or not they have children, and also according to the age of the youngest child.
    We reported the same studies in 1956, 1961, 1967. This time, we have compared the result with the data of 1967 and 1971.
    The result is as follows :
    1) In all life time, homemaking hours are most markedly influenced by whether or not they have children and by the age of the youngest child, and homemaking hours of the couples which have children are longest than those of childless couples; especialy in the case that the wives are employed, there is significance in the data of both weekdays and holidays.
    2) Among the couples which have children, those whose youngest child is under school age have longer hours for homemaking and shorter hours for social and cultural activities than other couples' hours. Whether the wives are employed or not, the result is the same.
    3) Homemaking hours decreased gradually from 1956, to 1961 and 1967, but this time they increased. It shows the same tendency as the N. H. K. report.

  • Children's Awareness toward Clothing Constructionin the Elementary Schools (1)

    A survey was conducted on the awareness of the fifth graders in Bag Making, concerning difficulty of the work, their interest and self-evaluation.
    The results indicate that :
    1. In all respects of the work, their awareness of the difficulty and self-evaluation was medium, while their interest was a little higher.
    2. Viewed by the kind of the work, they were found to feel more difficulty and less interest in the operation of “Sukui-kaeshi-dome” at “Kuchi-aki-domari, ” while more difficulty and more interest in “Nami-nui.”
    3. Concerning the relationship between awareness of the difficulty and the interest in each work, there was a tendency that they feel more interest in the easier work. Concerning the relationship between awareness of the difficulty and self-evaluation, they evaluated that their workmanship was not good in the kind of work which they felt was difficult.
    4. This survey seems to show that Bag Making is an adequate instructional material for the fifth graders.

  • Children's Awareness toward Clothing Construction in the Elementary Schools (2)

    The teacher classified the fifth graders' products in Bag Making by their workmanship and investigated the differences of their awareness of the difficulty for the work according to the classification.
    The results indicate that :
    1. Concerning their awareness of the difficulty for all kinds of the work, the worse the graders' workmanship was the more difficulty they felt, though the difference of their awareness was not so great.
    Each class found interest for the work. The worse their workmanship was, the lower their self-evaluation was.
    2. Through all kinds of the work, the graders who belonged to the upper and middle class in evaluation, found interest in the same kind of work, while those who belonged to the lower class found interest in different kinds of the work. Concerning self-evaluation, both the upper and middle classes had the same tendency, while the lower class evaluated their workmanship lower than they were in varied tasks.
    3. Consequently, it seems that particular attention must be paid for the guidance of the lower class graders.
