  • Effects of Aging at Low Temperatures

    “Umami, ” tasty components, of “Sobatsuyu, ” a soup for buckwheat noodles, has been known to increase by aging at low temperatures a mixture of a cold water extract of Katsuobushi and soy sauce at a ratio of 3 : 1. The present study was undertaken to demonstrate the role of proteolytic enzyme present in a mold grown on the surface of Katsuobushi in such an increase in “Umami.”
    Casein used as a model substrate was treated with a cold water extract prepared from the surface layer of Katsuobushi and the reaction products were fractionated into the oligopeptide and free amino acid fractions. The amount of the former increased on aging the reaction mixture at a temperature range of 5-37°C, whereas that of the latter remained almost unchanged. A sensory test indicated that “Umami” increased with increase in the amount of the former fraction. The oligopeptide fraction was found to be consisted mainly of glutamic acid, glycine and alanine.

    Investigation was made concerning the effect of various types of detergents on the color of dyed cotton cloths, by the JIS washing fastness test using the Launder-O meter and also by the multi cycle machine wash test using the Terg-O-To meter. The relationship between these two tests was examined.
    1. With direct dyed cotton cloths, a good correlation was observed between the two test methods. In the JIS test, aftertreatment with cationic fixative was found to improve washing fastness. In the multi-cycle machine wash test, on the other hand, a greater change in color was noted when a color change had already been effected by aftertreatment, probably due to desorption of fixative by repeated washing. Thus in some cases the extent of color change in after treated cloths was greater than that in untreated ones.
    2. In some cases involving reactive dyed cloths, color change due to abrasion was observed in the multi-cycle machine wash test using heavy duty synthetic detergents, especially the liquid type. The JIS test did not bring about this phenomenon.
    3. Using indigo dye, color change by the multi-cycle machine wash test was far greater than that by the JIS test because the mechanical action during washing tends to remove dye from the fiber.

  • On the One-Piece Wear

    Clothing moves according to change of a body motion and so a slippage occurs between body and clothing. This research was designed to study how the slippage changes with the difference of clothing ease, with/without sleeve and the differences of somato-types. To measure the slippage we used the thread as follows. We measured the length of thread which was withdrawn to the skin side according to the body motion, when the one edge of thread was fixed on the skin surface and the other edge was led vertically to the outside of clothing.
    The results are as follows : (1) The slippage of clothing changes mainly with ease. At the armhole and lower garment of the clothing, we found out that the slippage was caused by with/without sleeve, but not caused by the differences of somato-types. (2) There are more slips on one-piece with large ease than that with small ease. (3) The garment covering lower part of the body is too ready to slip, but that covering upper part of the body is difficult to slip. Especially, at the shoulder level, the slippage scarcely occurs.

  • Interrelationships with Menarche

    With the view of planning garments, a longitudinal investigation on physical types of junior high school girls was made. The data consist of 695 sets of original measurement cards investigated in 1975-1978. Measuring items consist of 11 lengths, 1 width, 6 circumferences and the weight : 19 items in total. The percentage of post-menarchal girls was 62.4 % at the 1st school year, 86.6 % at the 2nd, 96.4 % at the 3rd.
    Based on the 3rd examination data, examinees were classified according to the menarche into 6 groups i.e., pre-menarcheal (group 0), 0-1 year after menarche (group 1), 1-2 years after menarche (group 2), 2-3 years after menarche (group 3), 3-4 years after menarche (group 4) and 4-5 years after menarche (group 5).
    The main results are as follows :
    First school-year : almost items showed significant differences (1 %) between 6 groups.
    Third school-year : the differences among 6 groups were not so large in items of the lengths as in items of the circumferences and the weight.

  • A Comparison between the Yamanote Area of Tokyo and the Shitamachi Area

    We studied 1, 089 pairs of mothers and children in order to analyze the relation between the degree of children's independence and demographic factors and socio structural factors. We also examined the relation between independence in children and maternal discipline and affection so that we might determine the relation between all these different factors. Of the 1, 089 pairs of mothers and children, 509 lived in the Yamanote area of Tokyo and 580 lived in Shitamachi.
    The main results were as follows : (1) in both Yamanote and Shitamachi, children's independence is strongly determined by the affectional factor, (2) this affectional factor is determined by mother's interference and praise in both Yamanote and Shitamachi, but the affectional factor is more direct in Yamanote than it is in Shitamachi.
    We can say that the mother and child affectional-relationship factor is more important in the development of the child's independence than socio structural or demographic factors.
