      In order to select the size and weight of a kitchen knife for elementary school child, the measurement of holding force at the time of cutting and sensory evaluation were performed. Three sorts of kitchen knives, vegetable kitchen knife, peel kitchen knife and a fruit kitchen knife, were used. The panelists of quantitative measurement were the upper-classes children and the adults. The panelists of sensory evaluation were the lower-classes, the middle-classes and the upper-classes children and adults. In quantitative measurement, the vegetable kitchen knife had the smallest holding force at the time of cutting. The weight of a vegetable kitchen knife affected reduction of holding force. In sensory evaluation, peel kitchen knife was chosen out of the point of a size as a kitchen knife, which is easy to use.

      In order to select the handy grip size of the kitchen knife for elementary school child, the relation between the grip size of the peel kitchen knife and the size of hand and fingers were investigated. Three different thickness grips were installed in the each peel kitchen knives and weights of three peel kitchen knives were made up equal. Usually, the big size grip was installed in vegetable kitchen knife or fish kitchen knife, middle size grip was installed in smaller fish kitchen knife, and small size was installed in peel kitchen knife. Upper-classes children and adults chose bigger grip, and lower-classes and middle-classes children chose the slender grip as handy grip size. Generally the grip size of kitchen knife is fitted the length of edge, but the grip size of kitchen knife is better to fit the user's hand size for handiness.
