    Theoretical analysis is given for classical DTA, power-compensated DSC and heat-flux DSC, based on a unified model which is applicable to all the three types of instruments. The equation governing heat flow within the system are solved analytically assuming constant heat capacity and thermal conductivity. The method of estimating the actual temperature is given in the case of the first-order phase transition. A principle of drawing the base line is given for determining the enthalpy of the first-order phase transition. Applying the principle to the unified model, theoretically rigorous drawing of the base line is shown in the case that the heat capacities before and after the transition are different. Theoretical peak height due to the first-order phase transition is represented as a function of the heat capacity, the thermal resistance and the heating (cooling) rate. It is shown that the limiting peak height obtainable in the experiments is independent of the amount of the sample. A possibility is discussed of quantitative determination of the enthalpy of transition by using classical DTA.

    This review deals with the recent development of thermoluminescence (TL) and oxy-luminescence (OL) applied to polymers. In a typical TL measurement, light intensity illuminated from samples can be observed as a function of temperature. The obtained curve is usually called a glow curve containing one or more glow peaks. It is found a strict correlation between the TL glow curves and the relaxation spectra obtained from classical methods for polymeric materials. The pattern of TL glow curves, in both shape and intensity, vary in a characteristic manner reflecting the higher-order structure of polymer molecules.
    When polymers are heated in air of oxygen atmosphere at high temperature, a light emission caused by oxydation is observed as a function of temperature. This phenomenon is called OL. The OL peak in a glow curve can be attributed to the molecular relaxation of each polymer.
    The luminescent measurement, one of the most sensitive thermal analysis, applicable to a wide range of complex material. It is also suggested that future development of this analysis in various research fields.

    Several topics are briefly summarized, which are selected from results in thermal analytical studies on starch made for the purpose of explaining the structural stability of high molecular substances in foods. Topics include the application of thermal analysis (DTA, DSC) to examination of the gelatinization behavior of starch, effect of salts on the gelatinization behavior of starch, the structural stability of low moistuer starch, and the gelatinization behavior of starch in foods.
