Cheese is a source of calcium and protein and has various functions that improve health and lower the risk of disease. Natural cheeses of good quality have recently produced in Japan. The polyphenol content, 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2 '-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical-scavenging activity were examined to clarify the additional functional properties of Mozzarella, Camembert, Gouda, and Cheddar cheeses produced in Japan.
The cheeses used included polyphenols; ripened Camembert, Gouda, and Cheddar cheeses had a greater polyphenol content than did unripened Mozzarella cheeses. All of the cheeses had DPPH and ABTS radical-scavenging activity. The ripened cheeses had higher radical-scavenging activity than did the unripened cheeses.
These findings indicate that polyphenols included in the cheeses are a factor for the antioxidant activity. Japanese natural cheeses are expected to be much consumed as a functional food.

This study proposes educational methods to understand and acquire competencies in classes of planning and development of home economics. To do so, I developed contents of marketing and communication skills to facilitate issue-discovering and problems-solving for the classes of food planning and development. It was suggested that these contents were effective in improving critical thinking as well as promoting motivation and attitude toward dialog. Understanding and developing skills through project-based learning would be useful to acquire competencies of planning and development.
