Fine bubbles (FB) are nano- to micrometer-sized gas bubbles dispersed in a liquid. Among these, ultrafine bubbles (UFB), with diameters less than 1 micrometer, are characterized by exceptional stability, making them highly promising for a wide range of applications. Already commercialized in fields such as cleaning, the scope of their application is expected to expand further. In the food industry, successful applications include separating edible oils, inhibiting oxidation during cream production, and suppressing storage-related deterioration in sake. FB technology offers a diverse array of potential benefits, including antioxidation, modification of physical properties, enhanced preservation and dispersion stability, improved extraction efficiency, reduction of off-odors, flavor enhancement, and potentiation of bactericidal effects. Furthermore, its ability to reduce the need for food additives and extend product shelf life contributes to sustainable manufacturing, in line with the UN's Sustainable Development Goals (SDGs), and the transition toward a carbon-neutral society. This review highlights our findings on the application of FB technology in food processing, focusing on results related to ice cream, soy beverages, and other drinks.
A main challenge in future developments of domestic wheat varieties, especially Hokkaido wheat, is to further improve high yields while maintaining the quality, such as millability and processability. At the Small Research-Discussion on Cereal Grains at the annual meeting of the Japanese Society for Food Science and Technology (2024), Mr. Kaoru Takeuchi (Hokkaido Research Organization Central Agricultural Experiment Station) gave a lecture entitled "Characteristics and uses of Hokkaido grains". The lecture focused on case studies in which Hokkaido's unique method for wheat quality evaluation enables objective and easy processing of small amounts and multiple samples. Additionally, an overview of studies on new processing characteristics and quality evaluation of grains other than wheat (soybeans, red beans, buckwheat, etc.) that are mainly produced in Hokkaido was presented.
Hokkaido is the leading wheat-producing region in Japan, and efficient quality evaluation is essential for developing high-performance cultivars. This review summarizes wheat production in Hokkaido and recent advances in instrumental quality assessment methods for processing suitability as a complement or replacement for sensory evaluation, which is labor-intensive and unsuitable for large breeding populations. For Chinese noodles, a small-scale method using 50 g of flour enabled reliable texture measurements using breaking force and breaking energy, both of which showed strong correlation with sensory evaluation. Additionally, noodle color and discoloration tendencies could be effectively assessed using spectrophotometry. For sponge cake, key sensory attributes related to “melt-in-the-mouth” (crumb hardness, elasticity, and bolus flowability) were translated into instrumental parameters using compression tests with a texture analyzer, which aligned well with expert evaluations. These methods provide practical tools that enhance the efficiency of wheat breeding and support the development of high-quality wheat products in Hokkaido.
