    The fishing reports of one trawler from 1989 to 1994 covering 4499 hauls were analyzed to understand the catch characteristics of distant water small trawl operating in the Russian EEZ. Among 11 market categories of catch species, the sum of six categories reached 91.2% of the total catch. The catch composition of each haul was observed to have the wide range of multi-species, where the hauls of the single category exceeded 50% in catch weight ranged from 41.2% to 74.6% of the number of hauls according to the season and fishing grounds. Hauls exceeding 90% in catch weight by single category were likely to be observed in hauls which caught atka mackerel in Kuril Islands water in summer. In contrast, flatfish, Pacific cod and bighand thornyhead showed a lower catch percentage weight regardless of the season and fishing grounds even though they were major target categories in this fishery. Walleye pollock, a highly priority category, was often caught together with Pacific cod, flatfish, and sculpins. These differences in categories for the predominance tendency in catch composition could be explained from time/space distributions for each species as well as the operational strategy for such as towing durations.

    To make broad use of underwater space for mariculture, a mid-layer floating “Artificial Sea Floor” structure was developed and placed at a depth of 40 meters in Funagoshi bay in Iwate Prefecture in February 1996. The structure was constructed of welded steel (36.4×20.0m) and floated seven meters below the ocean surface. An operational deck projected above surface at the center of the structure. Six months after the facility had been anchored, the dstribution of fish around the structure during the daytime and nighttime was investigated by echo sounder.
    A weak stratified fish echo (TS -54.5--51.5dB) and cloud-like fish echo (TS -41--38dB) were identified. Weak stratified fish echoes were estimated to be pelagic animals and were not close to the facility. During the day, cloud-like fish echoes from juveniles of Scomber japonicus were distributed around the facility in small schools, and at night dispersed in the surface layer over entire survey area. The floating reef was concluded to act as a aggregation device for Scomber japonicus in the daytime.

    Catch of the firefly squid Watasenia scintillans in Toyama Bay was predicted by a multiple regression model using environmental factors. The relationship between annual catch, monthly average water temperature and monthly freshwater input into Toyama Bay was examined by simple regression analyses, and the most parsimonious multiple regression model was selected by Akaike Information Criterion (AIC). Using the multiple regression model, future catch was predicted. The goodness of fit between the actual and predicted catches was examined from the sum of residual squares. The results showed that the annual catches of this species are well explained by the surface water temperature in February of the previous year and the surface water temperature in April of the fishing year. Catches from 1993 to 1995 could be well predicted using the most parsimonious regression model estimated from the data set of the previous five years (1988-1992).

    Flatfish gillnet selection curves for cresthead flounder Pleuronectes schrenki were estimated using cumulative probability distributions of the retention girth at length. Catch data were obtained from gillnets of six different mesh sizes and five different hanging ratios in March and July 1995 and March 1996 in Saroma Lake. Average body lengths showed significant differences with mesh sizes, but no significant differences were observed with hanging ratios. The retention girths in the Sechin's model were used as the girth at the insertion of the pelvic fin and girth between the insertion of dorsal fin and tip of proximal pterygiophore of the first anal fin ray. The estimated selection curves increased in peak width with increasing mesh size, and these corresponded with body length frequencies obtained from each mesh size.

    Using a classical cardiac conditioning technique, the auditory thresholds of marbled sole Pleuronectes yokohamae were measured in the presence of masking noise in the spectrum level range of 70-90dB re 1μPa/√Hz. Critical ratios (signal-to-noise ratio) were approximately 27dB at 60-100Hz and 32-58dB at 150-700Hz. The ratio increased almost linearly with increasing frequency. The noise spectrum level at the start of masking was 62-70dB within the frequency range of 60-700Hz. This suggests that hearing of the marbled sole is masked in the natural environment with the noise spectrum level above 70dB.

    This study was conducted to examine the relationship between post-ovulation time and fertilization rates of artificially inseminated eggs of tiger puffer Takifugu rubripes. After hormonal treatment using cholesterol pellet incorporating LHRH-a (400μg/kg), four-hour interval palpation was performed to check expansion and hardening of the abdomen due to hydration of oocyte which indicates the completion of final oocyte maturation. Ovulation occurred between 18 and 36 hours after confirming hydration. The fertilization rate of the eggs collected from ten fish decreased as the time increased, showing 70.5% (peak), 7.7% and finally 0% within 4, 24 and 36 hours after ovulation, respectively. These results suggest that artificial fertilization of tiger puffer must be carried out immediately after ovulation in order to obtain good quality eggs.

    The heart beat variability has been known to show the activity of autonomic nerve system. In this study, we analized time series data of heart beat variability to assess physical load of rainbow trout tightend by a nylon line. Based on the stochastic theory, an autoregressive model was applied to the time series of heart beat valiability to express degree of physical load. Using some coefficients, a new parameter ARAV defined as the multiplication of total time series variance and the ratio of residual term variance to autoregressive term variance was used. The results of experiments using 9 rainbow trout showed the following tendency. In the hard tightened conditon, the ARAV reduced to infinitesimal values and continued for a time. Subsequently, the fish which indicated these ARAV values died within 24h. But in the gentle load, the ARAV was constant or less variable in comparison with resting condition. It was assumed that the ARAV expressed the degree of agonizing of the fish, and moreover gave the mortality or survival rate when injured and escaping from fishing gears.

    Relatioship between the blooming of Gymnodinium mikimotoi and water quality or meteorological factors was examined in Osaka Bay and Harima-nada, referring to the Meteorological Agency's data.
    The comparison of the average of each water quality parameter with the dominant species among phytoplankton from June to August of 1995-1997 showed that G. mikimotoi dominantly occurred in the waters with high water temperature, salinity, TN:DIN (total nitrogen: dissolved inorganic nitrogen) and TP:DIP (total phosphorus: dissolved inorganic phosphorus) ratios, moderate TN×TP and DIN:DIP ratio, and low TN, TP, DIN, DIP, and DSi (dissolved silicate). The red tide of G. mikimotoi occurred from late July to mid August of 1995 with meteorological conditions of high precipitation, high air temperature, long sunshine duration, and weak wind velocity in July.
    These characteristics of water quality and meteorological factors suggested that the abnormal occurrence of G. mikimotoi was closely connected with the increase of dissolved organic matter by the sudden increase and following decomposition of phytoplankton and the capability of utilization of dissolved organic matters of G. mikimotoi.

    In the inner part of Tokyo Bay, Heterosigma akashiwo dominantly occurred and red tides were sometimes formed from May to July. The relationship between the dominant occurrence of H. akashiwo and water quality or meteorological factors was examined, referring to the Tokyo Metropolitan Government's and the Meteorological Agency's data.
    In early June of 1984-1995, the yearly changes of water quality in the inner part involved a remarkable fluctuation of TN (total nitrogen), TP (total phosphorus), DIN (dissolved inorganic nitrogen), DIP (dissolved inorganic phosphorus), TN:TP, DIN:DIP, TN:DIN, and TP:DIP ratios.
    The comparison of each average water quality with the dominant species of phytoplankton in early June of 1984-1995 showed that H. akashiwo dominantly occurred in the waters with high water temperature, high concentrations of TN, TP, DIN, and DIP, high value of TN×TP, low salinity, and low ratios of TN:TP, DIN:DIP, TN:DIN, and TP:DIP. The species occurred in the years with meteorological conditions of high air temperature, long times of sunshine, high wind velocity, and moderate precipitation, during May. These characteristics of water quality or meteorological factors suggested close connection to the physiological characteristics of H. akashiwo, such as the utility for dissolved organic nitogen.

    After soaking in 5% NaCl solution for two hours, a dried product of horse mackerel fillets was prepared by microwave heating from 40 to 70°C under reduced pressure from 50 to 300 Torr.
    The myofibrillar protein subunit composition was determined by SDS-PAGE and the quality of the dried product was evaluated by its appear-ance and elasticity during the preparation of the dried product.
    The results obtained were as follows:
    (1) Quality of dried product was different from condition of microwave heating under reduced pressure, and 50°C-50 Torr was the most suitable condition.
    (2) When about 10% of myosin heavy chain remained and the cross-linking reaction of the myosin heavy chain (HCn") was not proceeded, the quality of the dried products was evaluated as “good”.

    Cultured spotted halibut Verasper variegatus of which distribution will be expected to increase in the near future, was evaluated in several quality indices by comparing with cultured plaice Paralichthys olivaceus.
    Spotted halibut had a low mortality rate during transportation. Rigor mortis which is utilized as an index for freshness and ATP consumption showed a slower process than plaice. Shear force of muscle showed over two times that of plaice. Collagen content was almost the same between the two fish muscles, but in the connective tissue which excluded the myocommata, the collagen content was significantly more than in plaice. No difference in the muscle structure according to the light microscopy suggested that the difference in the muscle texture would be influenced by the collagen of endomysium.
    According to these results, spotted halibut is superior in many respects to plaice and would be expected to be a major cultured fish in the near future.

    Setting gel and setting-heating gel were prepared from the NaCl-ground meat of walleye pollack mince which contained sorbitol alone, upon addition of sodium pyrophosphate, pH7.0 (Na-PPi) in the copresence of varied concentrations of CaCl2 (Ca). Quality of the NaCl-ground meat was investigated by measuring biochemical property of myofibrillar (Mf) protein. Gel forming ability of the NaCl-ground meat together with cross-linking reaction of myosin heavy chains was also investigated. The results obtained were as follows.
    (1) The addition of PPi-Na increased the NaCl-solubility of Mf protein and caused myosin ATPase unstable.
    (2) The PPi-Na evidently suppressed the rate of cross-linking of myosin heavy chains in the meat induced by setting incubation, and enhanced the softness (as measured by the force (g) required to cause the strain of 1.0cm) of the setting gel.
    (3) When high concentration of CaCl2 was added to the NaCl-ground meat containing a fixed concentration of PPi-Na, a portion of Ca was complex with PPi-Na to produce an insoluble salt and diminished the overall changes above mentioned the softness of the setting-heating gel and myosin ATPase unstable.

    Poor cooling in the fish hold leads to the decline of freshness in the set net catch. This phenomenon typically occurs when jellyfish accidentally captured in the set net are kept in the hold with the fish catch, which has been recognized by fisherman for a long time. Such detrimental effects caused by moon jellyfish were investigated experimentally. The temperature of the fish hold only containing the jellyfish remained at around 20°C even cooled with ice. The maximum temperature rise of the fish hold increased in proportion to the total wet weight of the mixed jellyfish, decreasing the quality and freshness of fish in the hold. The temperatures of the fish hold further increased when the mixed jellyfish were naturally vibrated in the fishing boat, reaching 1.5 times as high as that observed when the jellyfish were allowed to stand without vibration. While the heat conductivity of sea water was affected by the mucus secreted by the jellyfish, the quantities and protein concentrations of the secreted mucus increased in proportion to the body weight of the jellyfish.

    Microflora of Kaburazushi (fermented turnip and yellowtail with malted rice) and Daikonzushi (fermented radish and Pacific herring with malted rice), traditional fermented food in Kanazawa, Japan, were surveyed by a simple method using several selective media and non-selective media. In the case of the Kaburazushi or Daikonzushi made by four factories, predominant bacterial groups were lactic acid bacteria (lactobacilli and/or lactococci), however samples obtained from the different factories showed different numbers of lactic acid bacteria (104 to 108/g) and the numbers did not correlate with the concentration of lactic acid and the pH value. In the case of the homemade samples, the numbers of lactic acid bacteria increased to about 108/g in three days and correlated with the increase of lactic acid concentration and the lowering of pH value. The numbers of yeast decreased about from 105 to 102/g during seven to 14 days' fermentation. The numbers of halophilic bacteria and contaminants, such as bacilli and coliforms, were decreased with the fermentation. These results indicate that the character of the microflora and fermentation of some Kaburazusi and Daikonzushi made by factories differs from that of the homemade variety.
