Effect of physical exercise on preference of sapid solutions was studied in twenty-seven healthy university students. After thirty miniute exercise using a bicycle ergometer at intensity 50% VO_2max (maximal oxygen uptake), rating scale tests about taste hedonic tone and triangle tests for taste absolute threshold were performed. Test solutions were sucrose, NaCl and monosodium glutamate (MSG). The absolute threshold for all sapid solutions were not different between pre-exercise and post-exercise tests. Preference scale values of sucrose increased after exercise in a half of the subjects, while the values of NaCl and MSG did not change in most of the subjects. A positive correlation between the ratio of scale value at post-exercise to scale value at pre-exercise test and consumed calory by exercise was recognized. In some subjects, preference for sucrose did not change after thirty minute exercise, but preference for sucrose increased after sixty minute (prolonged) exercise. These results suggest that preference for sucrose increases after physical exercise.
