Tofu cake (50%), cooking waste in restaurant (30%), stale bread (5%), rye bran (5%) and commercial formula feed (10%) were mixed and fermented in treatment plant for 6days.
Fermented drying food waste (dried feed) contains 6.2% moisture, 27.5% crude protein on dry matter basis, 14.7 % crude fat 13.7% non firous carbohydrates, 40.3% organic cell wall and 1.7% docosahexaenoic acid. Digestibility of crude protein, crude fat, organic cell wall and P were higher (p<0.01) for dried feed than for commercial formula feed. TDN content of dried feed was about 86% on dry matter basis. Dried feed was considered to be safe as a feed because there were little salt (about 0.8%), peroxide value (about 3meq/kg) and swine erysipelas was negative.
