Abstract
This study was performed to investigate the beneficial use of yuzu pomace as a feed additive in young yellowtail. The antioxidant effects of grated yuzu rind from pomace (yuzu paste) in the prevention of dark muscle discoloration during storage of sliced young yellowtail were tested. Dark muscle discoloration during storage at 4°C was significantly reduced in fish fed a yuzu paste-supplemented diet (50 g yuzu paste in 1,450 g of diet, wet basis). This result indicates that the supplementation of yuzu paste to diets is effective to prevent dark muscle discoloration in young yellowtail.
