Abstract
"The sterilization performance of low concentration lactic-acid solution (0.01〜0.1%(w/v)) at -80, -20 and 7℃ was evaluated against two kinds of yeast (Saccharomyces cerevisiae,Candida albicans) and two kinds of bacterium (Bachillus subtilis,Escherichia coli). The freezing of 0.05-0.1%(w/v) lactic acid solution at -20℃ showed an effective sterilization to S. cerevisiae and C. albicans, giving 0.1% of viability of the both yeast after 5days. The freezing procedure showed similar sterilization effects to E. coli at -20℃, but no effect to B. subtilis at any temperatures. The gas generation ability of S. cerevisiae survived after 5 days freezing at -20℃ was the same as that without freezing, suggesting no irreversible damage of the S. cerevisiae during the freezing sterilization."
