Abstract

The inhibitory effects of various carboxylic acids against the glutamic acid decarboxylase of the squash were investigated. The results obtained are as follows:
1. Carboxylic acids compete with the γ-carboxyl group of the glutamic acid, and the degree of inhibition depends on the chain lengths of the carboxylic acids.
2. Carboxylic acids with any functional groups are less inhibitory than those with no functional groups: for example, amino acids, hydroxy acids and keto acids have no or little inhibitory effects.
3. Steric isomerism is also concerned with the inhibition, cis-form acids being more effective than trans-form acids.
