Abstract
Chronic kidney disease requires lifelong dietary adjustments because the renal function gradually declines with disease progression culminating into end-stage kidney disease. The dietary adjustments primarily involve protein, salt, potassium, and phosphorus restrictions.
In this study, we focused on the honorable days diet of patients with chronic kidney disease, explored the possibilities of diets for treatment, and aimed to improve the quality of life of chronic kidney disease patients.
The diet is expected to be compatible with the chronic kidney disease diet, and we chose the "Italian course meal " to create an extraordinary diet suitable for honorable days diet. Three types of menus with adjusted energy, protein, and salt content were created, and a questionnaire was administered after trial production and tasting. The prototype course meal was highly evaluated in regard to seasonings, quantity, combinations of food types, and direction of the menu. In terms of nutritional value, we were able to achieve the planned energy and protein content.
Our results confirm the compatibility of the chronic kidney disease diet with the Italian course diet. The option of choosing a course meal masked the feeling of inadequacy owing to dietary restrictions, and instead led to a feeling of satisfaction.
In conclusion, we would like to develop diverse menus in the future as a course meal that suits more people with diseases.
