Abstract
The quality of the marketing canned juices were examined.
Factors that be tested in this examination are shown as following. Chemical analysis……protein, insoluble solid, acidity, pH, total sugar, ascorbic acid, brix-acid ration, color evaluation, cloud evaluation and specific gravity etc. The examination of containers……gross headspace and vacuum.
