An Inspection of Bacteria in Acidophilus Beverages and Fermented Milk Sold at Shops

Abstract
We inspected 100 kinds of fermented milk (30 articles of commerce) and 127 kinds of acidophilus beverages (59 articles of commerce) sold at shops from July in 1966 to March in 1967 in all parts of our country.
The results were as follows;
1) As to articles of commerce, only 20 per cent of fermented milk and 15 per cent of acidophilus beverages came up to the standard marks of ordinance of the Welfare Ministry. The rejected articles of fermented milk, for the most part, were short of quantities of bacillus acidophilus and protein in the milk. Bacterium coli was not detected in any articles.
2) 70 per cent of articles of commerce contained more than 10, 000 of various other kinds of bacteria per 1ml.
3) Some kinds of articles depended on artificial sweetenings for their flavour.
4) It will contribute to the health of the people that a certain article sold on a large scale all over the country always came up to the standard marks of ordinance. But many other articles were short of standard marks of ordinance, so it will be necessary to supervise such makers strictly.
