Rheology of Adzuki Beans Paste

Abstract

We study yielding behavior of adzuki beans paste under oscillatory shear. PIV analysis showed that the granules form clusters under the oscillation. In spite of the cluster formation of the granules, the dynamic moduli showed decrease with the strain amplitude. The cluster formed under the oscillation might be a local structure and thus do not contribute the modulus.
