Abstract
For the distribution of pacific saury, ice storage distribution is practically used to improve product value, although it would increase environmental load. This study attempted to calculate LC-CO2 of ice-storage and frozen distributed pacific saury in case of being captured in Miyagi Pref. and consumed in Tokyo. Further, we evaluated the quality of unfrozen and frozen-thawed pacific saury by measuring WTP based on sensory evaluation. Finally, we evaluated the ice storage distribution of pacific saury from the view point of environmental efficiency.
