Abstract

We compared freshness estimations of four kinds of vegetable with color and grayscale image stimuli. The results show that color is not critical factor on freshness perception. In addition, we modified the relative luminance contrast between the vegetables and the background, and found that the freshness estimation depends on luminance level and contrast.
