Abstract

This research based on a lack of traditional cake literatures. Indonesia have a lot of traditional cakes scattered in each islands. Traditional cakes are often become the unique characteristics of an area. Interest of the community for this traditional cakes tended to decline, it is saw by more intense of the foreign concessions as Korean, Japan, or European hawkers. Whereas, Indonesia have all kinds of own traditional cakes that can be developed and innovated, so it can compete trough the foreign. One of West Java traditional cake derived from Garut that rarely to find. It called burayot cake that made from rice flour. These condition would give business opportunities for preserve it. So, the diversity of Indonesian food will remain sustainable. To inovate this traditional cakes by means of various flavor to add, not only have a sweet taste original course. Writer ensure that the business opportunities will give positive impact. It is hoped, this business can introduce and preserve the traditional cakes being natural, nutritious, and having no less good with foreign cakes or feed.
