Abstract
To promote the production of useful substances such as polysaccharide and trehalose from Flammulina velutipes mycelium in submerged culture, F. velutipes was exposed to stress caused by a sudden change in temperature. The production of polysaccharide doubled when the temperature was changed once and tripled when it was changed twice. The production of trehalose was promoted only when the temperature was changed from high to low during the exponential growth phase.
