Collagen peptide was formed from scales of pacific saury obtained from Sanriku region by high-temperature and high-pressure water treatment at 200 - 400 ℃. The amount of collagen peptide after high-temperature and high-pressure water treatment (200 ℃, 5 min) was up to 25 [mg/100mg of scale], compared to 20 [mg/100mg of scale] with conventional method (cutter mill downsizing, hot water extraction(95 ℃, 240 min), and enzymatic hydrolysis). In addition, it was found that the molecular weight distribution of the collagen peptide could be controlled by the combination of high-temperature and high-pressure water treatment and enzymatic hydrolysis.
