Analysis of the Waste from School Lunch and the Availability of Consumer Education

Abstract
We analyze school lunch waste in 73 public primary and junior high schools in Gifu city. The quantity of waste differs greatly from school to school, suggesting the influence of the pupil's perception and school activities on waste. We analyze the relationship between the quantity of school lunch waste and school activities or pupil's perception and discuss the availability of consumer education through school lunch. The results showed pupils at schools with less waste find that school lunch is of good taste and fun, and less pupils leave dishes uneaten, even less favoured ones. And the quantity of waste is small at the school where activities on school lunch are done. Consumer education would be available by teaching materials, production, distribution, consumption, and disposal of food through school lunch waste at school, home, as well as in the local region, or by media.
