Crystallization behaviour of n-hexadecane in o/w emulsion have been studied by ultrasonic velocity measuremants and differential scanning calorimetry. In comparison with the results of the o/w emulsion systems with those of the bulk systems, the following results were obtained; (a) the additives accelerated the nucleation in the emulsion systems, (b) the rates of crystal growth were retarded caused by the additives.
