Abstract
As for the O/W emulsion which oil distributed water, is used in food, cosmetic and medicinal drug. Crystallization of the fat in an emulsion is also one of the factors of a quality of these products, and it is expected that solving the mechanism of the oil-and-fats crystallization in a drop leads to solution of these problems.
