Application of a taste sensing system to Poaceae as cat grasses

Abstract

To characterize the taste profiles of Poaceae as cat grasses, a method for analyzing plant taste using a taste sensing system was evaluated. Using this method, the gustatory characteristics of plants that cats may potentially encounter in their daily environment were identified. A total of 39 plant species from 15 families─including grasses, legumes, vegetables, fruits, plants associated with self-anointing behavior, and toxic plants for cats─were analyzed. Each plant (100 g) was processed using a food processor, after which ground cat food A and pure water were added and mixed. The aqueous layer obtained by centrifugation was used as the sample for taste analysis. The measurement error rate for each taste category was less than 50% and considered acceptable. Principal component analysis was performed based on the average taste values of each plant family. The results indicated that the initial taste of umami was distinct from other taste components. Hierarchical cluster analysis revealed that the Poaceae family classified as a group with relatively low sourness and bitterness, along with substantial umami and saltiness. In conclusion, the unique taste characteristics of the Poaceae family have been identified. The high level of umami in Poaceae may be attractive to cats, and that could be one reason why cats are able to accept Poaceae.
