GABA enriched brown rice is one of the healthy foods marketed as “Germination brown rice”. In this report, the effects of GABA enriching conditions (temperature, time, aeration etc.) on the qualities of the germination brown rice such as GABA content, germination rate, grain mass losses were examined. In order to inhibit the breeding of bacteria during the water absorption process, the usage of electrolyzed acid water was examined. It was found that there were various relations of enriching conditions and quality of brown rice.
