As an initial step in developing a portable rice-quality analyzer, we developed sampling-free measurement probes for determining the protein and moisture content of rice using near-infrared spectroscopy and applied them to brown and milled rice with/without packaging. The results showed that although the accuracy was inferior to that of a whole-grain transmission near-infrared analyzer, the accuracy with/without packaging was sufficient for both inspection and quality checks in a market. We also tested paddy rice, but found that the accuracy for paddy rice was inferior to that for brown and milled rice and concluded that the probes have to be improved for paddy rice.
