Abstract
Since drying method of short piece moodle has been adopted natural drought drying or low temperature drying owing to the difficulty to perform perfect drying and the tendency to deform and become brittle. Then long time has been needed for it.
We made a instrument for the aim to get perfect artificial drying of them. And found one suitable drying method and study for several characteristics of noodle.
(1) In order to get perfect drying without deformation and decrease of strength of the products, the heating and tempering must be repeated 2-4 times in the drying course.
(2) The heating temperature must be under 40°C. The suitable temperature is 20°C.
(3) The suitable moisture of the draught air is 60-70%.
On the practical manufacturing process it is acceptable that the temperature is used under 40°C and the moisture is applied 60-80%.
(4) When artificial drying is applied, we get the better quality products more than that of natural draught drying method which is customed.
