Abstract

Banana ripening experiments with about 240kg (twenty cartons) of banana were conducted to examine an applicability of results obtained in experiments on rather small scale using about 12kg of banana to commercial banana ripening practice. These enlarged experiments were about 1/25 to 1/10 of the scale of commercial practice in quantity of banana.
The applicability was confirmed by the results that in the enlarged experiments, the prediction of sugar content of banana pulp during ripenig was also made in good accuracy with the ripening temperature schedule and this proved realization of the automation of banana ripening on commercial scale.
Finally, the fundamental procedure far the auotmation was illustrated by the flow chart.
