A dehumidifying drying system for buckwheat with high moisture content just after harvesting was developed and its performance was discussed. The dehumidifying coefficient Kw was calculated with the change of dehumidified water under the various conditions of air temperature and humidity. The efficiency of heat pump dehumidifier and drying rate of buckwheat were investigated at each drying period. The critical limits of air temperature and humidity for the utilization of the heat pump dehumidifier were obtained in practical use. The dehumidified water could be estimated according to the relationships between drying condition and consumed energy of dehumidifying drying system.
