Abstract
Physio-fuctional proteins and bioactive peptide to control cholesterol, hypertension and immune systems have been discovered in food proteins. Some of them have proved to be effective after the oral administration. We have developed transgenic rice, in which physio-functional proteins and bioactive peptides with functions to suppress life style related diseases were accumulated in endosperm tissue of rice seed. For the targets of typical type I allergies such as pollinosis and house dust mite allergies, synthetic peptides consisting of several major T cell epitope peptides of these allergens were accumulated in the endosperm tissue, because oral administration of high amounts of epitope peptide can induce immune tolerance through anergy or deletion of specific T cells. These transgenic rice may contribute to protect and alleviate life style related diseases and allergic diseases through daily diet of these transgenic rice.
