Development and Application of Biosensor for Starch Analysis

Abstract

A flow-injection type glucose biosensor was constructed using with immobilized glucose oxidase and a micro hydrogen peroxide electrode. Glucoamylase treatment followed by detection with the biosensor was successful for quantitative analysis of starch in paper and coating color.
