Abstract
In this study we investigated the effect of HCI-treated fibroin on the blood cholesterol level, using rats fed on diets containing cholestrol and cholic acid to increase their blood cholesterol level. When 5% of fibroin was added into the casein diet, the increase of the blood cholesterol level in the rats was inhibited in comparison with the administration of the casein diet. The effect was more conspicuous than that of soy protein or of an amino acid mixture with the same composition as that of fibroin. The fibroin treated with 3N HCI for 48 hour was most effective.
