Abstract

A review of the reactivity of gelatin is described on the following items. 1. Introduction, 1.1. Reactivity of gelatin, 1.2. Reactive groups of gelatin, 2. Reactive reagents, 2.1. Reagents that mainly react with amino groups: Carbon disulphide, Aldehydes and ketones with sodium borohydride, Unsaturated compounds, Imidoesters, o-Methyl isourea and s-methyl isothiourea, Isocyanates and isothiocyanates, Labile ring compounds, Acid anhydrides, Aldehydes, Ketones, Active halogen compounds, Sulphonates, 2.2. Reagents that react with both amino and carboxyl groups, Epoxides, Carbodiimides, Aziridines, 3. Reagents that modify only carboxyl groups, 4. Reagents that modify other groups, 5. Hardeners, 6. Expectation for the future research.
